Turkish Pide Bread Stuffed with Spiced lamb and Tomato | This Week's Yummies


I absolutely love this dish as it is so delicious and it is so easy to make. (Serves 4-6)  (40mins - 1 hour)

To make the Pide bread, You will need:

3 Cups Whole Wheat Flour
1 tbsp Instant Yeast
1 tsp Salt
1 tsp Sugar
1 Cup Lukewarm Water
1/4 Cup Olive Oil
2 tbsp Olive Oil, for brushing Pide

For the filling, You will need:

1 tsp Butter
350g Minced Lamb
1 Onion, Diced
2 Cloves of Garlic, Chopped
1 tsp Tomato Purée 
1 tsp Ground Ginger
1 tsp Ground Coriander
A Pinch Ground Cinnamon 
1 400g Can of Chopped Tomatoes
Salt and Pepper

  1. Mix the flour, yeast, sugar and salt together in a large bowl
  2. Pour in about 2 tsps of water and olive oil at a time until the correct consistency is achieved
  3. Use your hands to combine well until you form a soft dough, which is not too sticky
  4. Leave the dough covered with cling film when preparing the filling
  5. Preheat the oven to 180c
  6. Heat butter in a pan on medium heat
  7. Fry the lamb mince until it turns brown
  8. Add the onion and garlic and cook until softened
  9. Add the tomato purée, ginger, ground coriander, cinnamon and a little seasoning
  10. After a few minutes, add the chopped tomatoes and cook for a further 10 mins
Remove the cling film from the bread dough
Dust the surface with some flour
Split the Dough into around 10 balls and roll them out
Roll the doughs out thin and transfer it to a greased baking tray
11. Place the filling onto  the dough, make sure not to put on too much
12. Fold the sides of the dough to the centre and brush the dough with olive oil
13. Sprinkle sesame seeds on top of the dough to finish
14. Bake for 20 minutes, until golden brown
15. Serve with parsley on top
